1.5 lbs baby potatoes (halved)

4 tbsp olive oil

4 cloves garlic (minced)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp dried Italian herbs (oregano, thyme, basil)

Salt and pepper to taste

Fresh parsley (chopped, for garnish)

Zest of 1 lemon (optional)

Instructions
 

Prepare the Potatoes: Preheat your oven to 425°F (220°C). In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet.

    Roast the Potatoes: Roast the potatoes in the preheated oven for 20-25 minutes or until golden brown and fork-tender. Toss them halfway through for even cooking.

      Make the Garlic Sauce: While the potatoes are roasting, heat the remaining 2 tablespoons of olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté until fragrant (about 1-2 minutes), being careful not to burn it.

        Add Cream and Cheese: Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese, dried Italian herbs, and season with salt and pepper to taste. Let it simmer for about 3-5 minutes until it thickens slightly.

          Combine: Once the potatoes are done roasting, remove them from the oven and immediately pour the creamy garlic sauce over them. Toss gently to coat all the potatoes in the sauce.

            Serve: Transfer the saucy potatoes to a serving dish, garnish with chopped fresh parsley and lemon zest if desired. Serve warm and enjoy the velvety goodness!
