Veggie & Cheese Breakfast Quesadillas

Ingredients
  

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 bell pepper (any color), diced

1 small zucchini, diced

1 cup baby spinach, roughly chopped

1/4 cup red onion, finely chopped

2 large eggs

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon paprika

Salsa and sour cream for serving (optional)

Instructions
 

Prepare the Filling: In a medium bowl, beat the eggs and season with salt, pepper, garlic powder, and paprika. Set aside.

    Sauté the Vegetables: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced bell pepper, zucchini, and red onion. Sauté for about 5 minutes until they start to soften. Add the chopped spinach and cook for another minute until wilted. Remove the vegetables from the skillet and set aside.

      Cook the Eggs: In the same skillet, add the remaining tablespoon of olive oil. Pour in the beaten eggs and scramble until fully cooked. Mix in the sautéed vegetables, then remove from heat.

        Assemble the Quesadillas: Place a tortilla in the skillet over medium heat. On one half of the tortilla, sprinkle a layer of cheddar and mozzarella cheese, followed by a generous scoop of the veggie and egg mixture. Top with a bit more cheese and fold the tortilla in half.

          Cook the Quesadilla: Cook for about 3-4 minutes on each side or until the cheese is melted and the tortilla is golden brown. Remove from heat and repeat the process with the remaining tortillas and filling mixture.

            Serve: Cut the quesadillas into wedges and serve hot with salsa and sour cream on the side if desired.
