1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 avocado, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

1 cup diced romaine lettuce

1 cup tortilla strips (store-bought or homemade)

½ cup shredded cheddar cheese (optional)

¼ cup fresh cilantro, chopped

½ cup Greek yogurt or sour cream (for dressing)

2 tablespoons lime juice

Instructions
 

In a large mixing bowl, combine the black beans, corn, cherry tomatoes, avocado, red bell pepper, and red onion.

    In a small bowl, mix together the cumin, chili powder, smoked paprika, garlic powder, salt, and black pepper.

      Sprinkle the spice mixture over the bean and vegetable mixture, tossing gently to coat everything evenly.

        Add diced romaine lettuce to the bowl and mix gently to incorporate.

          For the dressing, whisk together the Greek yogurt (or sour cream) and lime juice in a small bowl until smooth. Adjust with additional lime juice or seasonings to taste.

            To serve, divide the taco salad mixture into bowls. Top each with a handful of tortilla strips and a sprinkle of shredded cheese (if using).

              Drizzle with the creamy dressing and garnish with fresh cilantro.
