1/2 tsp onion powder

Salt and pepper, to taste

1/4 cup diced celery

1/4 cup diced red bell pepper

1/4 cup chopped red onion

1/4 cup chopped fresh parsley (or cilantro)

4 slices of whole grain bread (or your favorite vegan option)

Leafy greens (such as spinach or arugula) for serving

Optional: Sliced avocado, pickles, or tomato for topping

Mash the Chickpeas: In a medium bowl, use a fork or potato masher to thoroughly mash the chickpeas. Aim for a mix of chunky and smooth textures for better mouthfeel.
