1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 large egg

1/2 cup whole milk

1 tablespoon vanilla extract

2 tablespoons unsalted butter, melted and cooled

Powdered sugar for dusting

Vegetable oil for frying

Prepare the Dough: In a large bowl, sift together the flour, sugar, baking powder, and salt. Create a well in the center and add the beaten egg, milk, vanilla extract, and melted butter.

    Mix: Stir the ingredients together until just combined. Avoid overmixing; the dough should be slightly sticky and soft.

      Chill: Cover the bowl with plastic wrap and let the dough rest in the refrigerator for about 30 minutes. This will help the beignets puff up nicely when frying.

        Roll Out the Dough: After chilling, dust a clean surface with flour. Turn the dough out onto the floured surface and roll it out to about 1/2-inch thickness.

          Cut into Squares: Using a sharp knife or pizza cutter, cut the dough into 2-inch squares.

            Heat the Oil: In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Use enough oil to allow the beignets to float while frying.
