Vanilla French Beignets

Ingredients
  

2 cups all-purpose flour

1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp salt

2 large eggs

1/2 cup whole milk

1/4 cup unsalted butter, melted

1 tsp vanilla extract

1/4 tsp ground nutmeg

Oil for frying

Powdered sugar for dusting

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and nutmeg until well combined.

    Combine Wet Ingredients: In another bowl, beat the eggs and then mix in the milk, melted butter, and vanilla extract until everything is smooth.

      Combine Mixtures: Gradually pour the wet ingredients into the dry ingredients, stirring until a soft dough forms. Avoid overmixing.

        Knead: Turn the dough onto a lightly floured surface. Gently knead the dough 2-3 times until it comes together. Pat it into a rectangle about 1/2 inch thick.

          Cut Beignets: Using a knife or a pizza cutter, cut the dough into 2-inch squares or rectangles.

            Heat Oil: In a deep fryer or a heavy skillet, heat about 2 inches of oil to 350°F (175°C).

              Fry Beignets: Carefully drop the dough pieces into the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side, until golden brown.

                Drain: Use a slotted spoon to remove beignets and transfer them to a plate lined with paper towels to drain excess oil.

                  Dust with Sugar: While still warm, generously dust the beignets with powdered sugar.

                    Serve: Enjoy the beignets warm, perhaps with a cup of coffee or chocolate!
