Ingredients

1 cup unsalted butter, softened (at room temperature)

1/4 cup honey (preferably local or raw for the best flavor)

1 vanilla bean (or 1 teaspoon pure vanilla extract)

1/4 teaspoon sea salt (or to taste)

1/4 teaspoon ground cinnamon (optional, for a warm spice touch)

Instructions

Prepare the Vanilla: If using a vanilla bean, split it lengthwise with a sharp knife. Use the back of the knife to scrape out the tiny seeds inside. Set the seeds aside and discard the pod.

Cream the Butter: In a medium mixing bowl, use a hand mixer or stand mixer to beat the softened butter on medium speed until it’s light and fluffy, about 2-3 minutes.

Add Sweetness: Gradually pour in the honey while continuing to beat the mixture. Ensure it’s well incorporated for a smooth texture.

Mix in Vanilla: Add the scraped vanilla bean seeds (or vanilla extract), sea salt, and ground cinnamon (if using) to the mixture. Beat again until everything is well combined, scraping the sides of the bowl as needed.

Taste and Adjust: Take a small taste of the honey butter and adjust the salt or sweetness to your liking by adding a little more honey or salt, if needed.

Chill and Set: Transfer the butter mixture to an airtight container or mold it into a decorative shape using parchment paper. Refrigerate for at least 30 minutes to help it firm up.

Serve and Enjoy: Once set, spread generously on warm bread, muffins, pancakes, or use it as a delightful topping for desserts!
