Ingredients

1 pound large shrimp, peeled and deveined

8 ounces linguine or spaghetti

4 tablespoons unsalted butter

3 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust for spice preference)

1 cup dry white wine (such as Sauvignon Blanc)

1 lemon, zested and juiced

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving (optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set it aside.

Sauté Shrimp: In a large skillet over medium heat, combine the butter and olive oil. Once the butter has melted, add the minced garlic and red pepper flakes. Cook for about 1-2 minutes until fragrant, but do not let the garlic brown.

Add Shrimp: Add the shrimp to the skillet in a single layer. Cook for about 2-3 minutes on one side until they turn pink, then flip them over and cook for an additional 1-2 minutes on the other side. Season with salt and pepper.

Deglaze the Pan: Pour in the white wine, lemon zest, and lemon juice, scraping up any browned bits from the bottom of the pan. Allow the mixture to simmer for about 4-5 minutes until the wine has reduced by half.

Combine with Pasta: Add the drained pasta to the skillet, tossing it with the shrimp and sauce. If the pasta seems dry, gradually add some of the reserved pasta cooking water until you reach the desired consistency.

Finish the Dish: Stir in the fresh parsley and adjust seasoning if necessary. Allow everything to heat through for a minute before removing from the heat.

Serve: Serve your Ultimate Shrimp Scampi hot, topped with additional parsley and grated Parmesan cheese if desired. Enjoy this delightful Italian dish with a side of crusty bread!
