Ultimate Savory Breakfast Sausage & Cheese Casserole

Ingredients
  

1 lb breakfast sausage (pork or turkey)

8 large eggs

2 cups milk

1 tsp onion powder

1 tsp garlic powder

1 tsp salt

½ tsp black pepper

4 cups day-old bread, cubed (French or sourdough works best)

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

½ cup chopped green onions

1 tbsp olive oil

Optional: ½ cup diced bell peppers or chopped spinach

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Sausage: In a large skillet over medium heat, add the breakfast sausage and cook until browned and crumbled, about 5-7 minutes. Drain excess fat if necessary. If using, add the diced bell peppers and sauté for an additional 2 minutes until softened. Remove from heat and let cool slightly.

      Whisk Eggs and Milk: In a large mixing bowl, whisk together the eggs, milk, onion powder, garlic powder, salt, and black pepper until well combined.

        Combine Ingredients: In a greased 9x13 inch casserole dish, layer the cubed bread evenly across the bottom. Top the bread with the cooked sausage mixture. Sprinkle the green onions evenly over the sausage. Next, pour the egg mixture over the entire dish, ensuring that all the bread pieces are soaked.

          Add Cheese: Finally, sprinkle both shredded cheddar and mozzarella cheeses evenly over the top of the casserole, ensuring good coverage.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the cheese is bubbly and the eggs are set in the center. A toothpick inserted should come out clean.

              Serve: Let the casserole cool for about 5-10 minutes before slicing. Serve warm, and if desired, garnish with additional chopped green onions.
