Instructions

Preheat your oven: Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal.

Make the cookie dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes). Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

Combine dry ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined. Gently fold in the chocolate chips and chopped Reese’s Peanut Butter Cups.

Spread the cookie dough: Press 2/3 of the cookie dough mixture evenly into the bottom of the prepared baking pan. Set the rest aside for topping.

Prepare the cheesecake filling: In a large bowl, beat the softened cream cheese until smooth. Add the powdered sugar and mix until well combined. Mix in the peanut butter and vanilla extract, blending until creamy. Add the eggs one at a time, mixing after each addition until just combined.

Layer the cheesecake: Pour the cheesecake mixture over the cookie base in the baking pan, spreading it out evenly.

Add cookie topping: Crumble the reserved cookie dough over the top of the cheesecake layer.

Bake the dessert: Bake in the preheated oven for 30-35 minutes, or until the edges are set but the center still has a slight jiggle (it will firm up as it cools).

Cool: Remove from the oven and allow to cool in the pan at room temperature for about 30 minutes, then transfer to the refrigerator and chill for at least 4 hours, or overnight, for best results.

Serve: Once chilled, lift the dessert out of the pan using the parchment paper overhang. Cut into squares and serve topped with whipped cream, crushed Reese’s, and a drizzle of chocolate sauce.
