8 oz elbow macaroni

4 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1/2 cup Parmesan cheese, grated

3 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

1 cup breadcrumbs (panko for extra crunch)

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Once melted, add the flour and whisk continuously for about 2 minutes until bubbly and golden, forming a roux.

        Add Milk: Gradually pour in the whole milk, whisking constantly until the mixture is smooth and starts to thicken, about 5 minutes.

          Incorporate Cheese: Lower the heat and add the sharp cheddar, Gruyère, and Parmesan cheese to the sauce. Stir until all the cheese is melted and the sauce is creamy. Season with garlic powder, onion powder, smoked paprika, salt, and pepper.

            Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce. Stir until the pasta is fully coated in the cheese mixture.

              Prepare the Topping: In a small bowl, combine the breadcrumbs with olive oil. Mix well until the breadcrumbs are evenly coated.

                Transfer to Baking Dish: Pour the macaroni and cheese into a greased 9x13 inch (or similar size) baking dish. Spread the mixture evenly.

                  Add Topping: Sprinkle the breadcrumb mixture evenly over the top of the macaroni and cheese.

                    Bake: Bake in the preheated oven for 25-30 minutes or until the top is golden brown and crispy.

                      Serve: Remove from the oven and allow to cool for a few minutes. Garnish with fresh parsley if desired and serve warm.
