1 pound large shrimp, peeled and deveined

8 ounces linguine pasta

4 tablespoons unsalted butter

3 tablespoons extra-virgin olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (like Sauvignon Blanc)

1 lemon, juice and zest

1/4 cup chopped fresh parsley

Salt and pepper to taste

Freshly grated Parmesan cheese (optional)

Instructions
 

Cook the Linguine: Boil a large pot of salted water. Add linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Shrimp: In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Once melted and hot, add the minced garlic and red pepper flakes. Sauté for about 1 minute or until fragrant, being careful not to burn the garlic.

      Add Shrimp: Add the shrimp to the skillet. Season with salt and pepper. Cook for about 2-3 minutes on each side, or until shrimp turn pink and are cooked through. Remove shrimp and set them aside.

        Make the Sauce: In the same skillet, pour in the white wine and lemon juice. Bring to a simmer and let it reduce by half, about 3-4 minutes. Stir in the lemon zest and remaining 2 tablespoons of butter until melted and combined.

          Combine Everything: Add the drained linguine to the skillet along with the cooked shrimp. Toss everything together, adding reserved pasta water a little at a time until the sauce reaches your desired consistency.

            Finish with Parsley: Stir in the chopped parsley and adjust seasoning with more salt, pepper, or lemon juice if needed.

              Serve: Plate the shrimp scampi and, if desired, sprinkle with freshly grated Parmesan cheese. Serve immediately and enjoy!
