Ingredients

1 ripe banana

2 large eggs

Instructions

Begin by peeling the ripe banana and placing it in a mixing bowl.

Mash the banana with a fork until it becomes a smooth puree without lumps.

In a separate bowl, crack the eggs and whisk them until well beaten.

Combine the mashed banana with the beaten eggs, mixing well until the batter is fully combined and smooth.

Heat a non-stick skillet or frying pan over medium heat. If desired, lightly grease the pan with cooking spray or a small amount of butter.

Pour about 1/4 cup of the pancake batter onto the skillet for each pancake.

Cook the pancakes for 2-3 minutes or until you see bubbles form on the surface and the edges look set.

Carefully flip the pancakes and cook for another 1-2 minutes until golden brown.

Remove the pancakes from the skillet and repeat with the remaining batter.

Serve warm, topped with your choice of syrup, honey, fresh fruit, or a sprinkle of powdered sugar.
