4 large russet potatoes

1/2 cup sour cream

1/4 cup milk

1 cup shredded cheddar cheese (divided)

1/2 cup cooked and crumbled bacon (optional)

1/4 cup green onions, chopped

2 tablespoons butter

Salt and pepper, to taste

Paprika, for garnish

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Bake Potatoes: Wash the potatoes thoroughly and prick them all over with a fork. Place them directly on the oven rack and bake for about 45-60 minutes, or until they are tender.

      Cool and Cut: Remove the potatoes from the oven and let them cool for about 15 minutes. Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a thin layer of potato on the skins.

        Make Filling: To the bowl with the potato insides, add sour cream, milk, 3/4 cup of cheddar cheese, cooked bacon (if using), green onions, butter, salt, and pepper. Mash and mix until creamy and well combined.

          Refill Skins: Spoon the potato mixture back into the potato skins, mounding it slightly.

            Top with Cheese: Sprinkle the remaining cheddar cheese on top of each potato.

              Final Bake: Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven, sprinkle with paprika and additional green onions, if desired. Serve hot and enjoy!
