Ingredients
  

1 can (5 oz) tuna in water, drained

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 stalk celery, finely chopped

1/4 cup red onion, finely chopped

1/2 cup shredded sharp cheddar cheese

2 large flour tortillas

1 cup baby spinach or mixed greens

Salt and pepper to taste

1 tablespoon olive oil or butter for cooking

Instructions
 

In a medium bowl, combine the drained tuna, mayonnaise, Dijon mustard, chopped celery, and red onion. Mix well until all ingredients are evenly coated. Season with salt and pepper to taste.

    Lay out the flour tortillas on a clean surface. Evenly distribute the tuna mixture in the center of each tortilla.

      Sprinkle half of the shredded cheddar cheese on top of the tuna mixture on each tortilla.

        Add a handful of baby spinach or mixed greens over the cheese.

          Fold in the sides of the tortilla, then roll from the bottom up to enclose the filling, creating a wrap.

            Heat olive oil or butter in a non-stick skillet over medium heat. Place the wraps seam-side down in the skillet, and cook for about 3-4 minutes until golden brown and crispy.

              Carefully flip the wraps and cook for an additional 3-4 minutes until the other side is golden and the cheese is melted.

                Remove from skillet, slice in half, and serve warm.
