Triple Layer Fudgy Mint Oreo Brownies

For the Brownie Layer:

1 cup unsalted butter

2 cups granulated sugar

4 large eggs

1 tsp vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

1/2 tsp salt

1/2 tsp baking powder

For the Mint Cream Layer:

1 cup powdered sugar

1/4 cup unsalted butter, softened

1-2 tbsp milk (as needed for consistency)

1/2 tsp peppermint extract

12 Mint Oreo cookies, crushed

For the Chocolate Ganache Topping:

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

Prepare the Brownie Layer:

    Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan. In a medium bowl, melt the unsalted butter. Once melted, mix in the granulated sugar until well combined. Add the eggs one at a time, stirring well after each addition, followed by the vanilla extract.

      Combine Dry Ingredients:

        In another bowl, whisk together the all-purpose flour, cocoa powder, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, stirring just until combined – be careful not to overmix.

          Bake the Brownies:

            Pour the brownie batter into the greased baking pan, spreading it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter). Remove from the oven and allow to cool completely in the pan.

              Make the Mint Cream Layer:

                In a bowl, beat together the softened butter and powdered sugar until smooth. Gradually mix in the milk until you reach a spreadable consistency. Stir in the peppermint extract and crushed Mint Oreo cookies. Spread this mint cream layer over the cooled brownie layer.

                  Prepare the Ganache Topping:

                    In a small saucepan, heat the heavy cream over medium heat until just simmering. Remove from the heat and pour over the chocolate chips in a bowl. Let it sit for a minute, then stir until smooth and glossy.

                      Assemble the Brownies:
