24 Oreo cookies, crushed

1/2 cup unsalted butter, melted

For the Chocolate Cheesecake Filling:

2 cups cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

8 oz dark chocolate, melted and slightly cooled

8 oz milk chocolate, melted and slightly cooled

1 cup sour cream

1/2 cup cocoa powder

For the Chocolate Ganache Topping:

8 oz semi-sweet chocolate, chopped

1/2 cup heavy cream

Chocolate shavings or curls for garnish

Instructions
 

Prepare the Oreo Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine crushed Oreo cookies with melted butter. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to create a crust.

          - Bake for 10 minutes, then remove and let cool while you prepare the cheesecake filling.

            Make the Cheesecake Filling:

              - In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy.

                - Gradually add sugar and continue beating until well combined.

                  - Add vanilla extract and mix until incorporated.

                    - Add the eggs one at a time, mixing on low speed after each addition until just blended.

                      - Gently fold in the melted dark chocolate, melted milk chocolate, sour cream, and cocoa powder until the mixture is smooth.

                        Assemble and Bake:

                          - Pour the chocolate cheesecake filling over the cooled Oreo crust in the springform pan.

                            - Bake in the preheated oven for 55-60 minutes, or until the edges are set but the center still has a slight jiggle.

                              - Turn off the oven and crack open the door, letting the cheesecake cool in the oven for 1 hour.

                                - Remove from the oven and let it cool completely on the counter before refrigerating for at least 4 hours or overnight.

                                  Prepare the Ganache Topping:

                                    - In a small saucepan, bring the heavy cream to a simmer over medium heat.

                                                Serve:
