8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning (adjust to taste)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley or green onions for garnish

Lemon wedges for serving

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Season the Shrimp: In a medium bowl, toss the shrimp with Cajun seasoning until well coated.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until it becomes translucent. Add the minced garlic and red bell pepper, continuing to stir for another 2-3 minutes until the peppers soften.

        Cook the Shrimp: Push the vegetables to one side of the skillet and add the seasoned shrimp. Cook for about 3-4 minutes, turning occasionally until the shrimp turns pink and opaque.

          Add Tomatoes and Cream: Stir in the halved cherry tomatoes and cook for 2 minutes. Then, pour in the heavy cream and bring it to a gentle simmer, allowing it to thicken slightly—about 2-3 minutes.

            Combine Pasta and Sauce: Add the cooked fettuccine to the skillet, along with the reserved pasta water. Gently toss everything together until well coated. Mix in the grated Parmesan cheese and season with salt and black pepper to taste.
