1 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

¼ teaspoon ground cloves

½ teaspoon salt

1 cup granulated sugar

½ cup packed brown sugar

¾ cup vegetable oil (or melted coconut oil)

4 large eggs

1 can (15 oz) pure pumpkin puree

1 teaspoon vanilla extract

1 cup chopped walnuts or pecans (optional)

½ cup raisins or chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easier removal.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt. Set aside.

      Combine Sugars and Oil: In a large mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Mix until well blended and slightly creamy.

        Add Eggs and Pumpkin: Beat in the eggs one at a time, mixing well after each addition. Then add the pumpkin puree and vanilla extract, and mix until the batter is smooth.
