The Ultimate Butterscotch Chip Cookie

Ingredients
  

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup unsalted butter, softened to room temperature

1 cup brown sugar, packed

1/2 cup granulated sugar

1 tablespoon vanilla extract

2 large eggs

1 cup butterscotch chips

1/2 cup chopped pecans or walnuts (optional)

Sea salt for sprinkling (optional)

Instructions
 

Preheat your oven: Set your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Combine dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

      Cream the butter and sugars: In a large mixing bowl, using an electric mixer, beat the softened butter, brown sugar, and granulated sugar together on medium speed until creamy and smooth, about 2-3 minutes.

        Add eggs and vanilla: Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract until well incorporated.

          Combine wet and dry: Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix!

            Fold in the goodies: Gently fold in the butterscotch chips and, if desired, the chopped pecans or walnuts using a spatula or wooden spoon.

              Scoop the dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

                Sprinkle with sea salt: If you like a sweet and salty contrast, lightly sprinkle a pinch of sea salt on top of each cookie dough ball.

                  Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers will look a bit underbaked, but they will firm up as they cool.

                    Cool: Remove the cookies from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
