The Easiest Crockpot White Chicken Chili with Cream Cheese

1 lb boneless, skinless chicken breasts

1 can (15 oz) white beans, drained and rinsed

1 can (15 oz) corn, drained

1 medium onion, diced

2 cloves garlic, minced

1 can (4 oz) diced green chilies

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon onion powder

1 teaspoon garlic powder

1 package (8 oz) cream cheese, softened

4 cups chicken broth

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Sliced jalapeños, for garnish (optional)

Sour cream, for serving (optional)

Instructions
 

Prepare the Chicken: Place the chicken breasts at the bottom of the crockpot. Add the diced onion, minced garlic, white beans, corn, and diced green chilies on top.

    Season It Up: Sprinkle the ground cumin, chili powder, onion powder, and garlic powder over the ingredients. Add salt and pepper to taste. Pour the chicken broth over everything, ensuring that the chicken is mostly submerged.

      Cook Low and Slow: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.

        Shred the Chicken: Once cooked, remove the chicken using tongs and place it on a cutting board. Shred the chicken using two forks and return it to the crockpot.

          Add the Cream Cheese: Add the softened cream cheese to the crockpot. Stir until it’s fully melted and well incorporated into the chili.

            Taste and Adjust: Give the chili a taste and adjust the seasonings, adding more salt, pepper, or spices if desired.
