2 pounds baby red potatoes, halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried rosemary (or 1 tablespoon fresh, chopped)

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Optional: 1 tablespoon balsamic vinegar for extra flavor

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the halved baby red potatoes with olive oil, garlic powder, onion powder, smoked paprika, rosemary, thyme, salt, and pepper. Toss well until all the potatoes are evenly coated.

      Spread the potatoes in a single layer on a large baking sheet, cut side down for optimal roasting.

        Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through to ensure even cooking.

          If using, drizzle the roasted potatoes with balsamic vinegar just before removing them from the oven for an added tangy flavor.
