Ingredients

1 cup unsalted butter, softened

1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup finely chopped pecans

1 cup caramel sauce (for filling and drizzling)

1/2 teaspoon ground cinnamon (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper.

Mix Sugars and Butter: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 3-4 minutes using an electric mixer.

Add Eggs and Vanilla: Beat in the eggs, one at a time, and then add in the vanilla extract, mixing well until fully combined.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon, if using.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.

Fold in Pecans: Gently fold in the chopped pecans until evenly distributed throughout the dough.

Form Cookies: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Make a slight indentation in the center of each ball with your thumb or the back of a teaspoon.

Add Caramel: Fill each indentation with a teaspoon of caramel sauce.

Bake Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown. Keep an eye on them as you want them slightly soft in the center.

Cool: Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Drizzle with Caramel: Once cool, drizzle additional caramel sauce over the top of the cookies for an extra sweet finish.

Serve and Enjoy: These pecan pie cookies are best enjoyed fresh but can be stored in an airtight container for up to a week.
