1 lb Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

2 teaspoons dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

8 oz lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley or basil for garnish (optional)

Instructions
 

Brown the Sausage: In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned. Break it up into crumbles as it cooks. Drain excess fat if necessary.

    Sauté the Vegetables: Add the diced onion, bell pepper, and garlic to the pot. Sauté until the onion is translucent and the vegetables are softened, about 5 minutes.
