1 lb ground beef (or Italian sausage)

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups beef broth

2 tsp Italian seasoning

1 tsp salt

½ tsp black pepper

8 oz lasagna noodles, broken into pieces

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil, for garnish

Instructions
 

Cook the Meat: In a large pot or Dutch oven over medium-high heat, add the ground beef (or sausage) and onion. Cook until the meat is browned and the onion is translucent, about 5-7 minutes. Drain excess fat, if necessary.

    Add Garlic and Tomatoes: Stir in the minced garlic and cook for about 1 minute until fragrant. Then add the crushed tomatoes, and give it a good stir.

      Add Broth and Seasoning: Pour in the beef broth and add the Italian seasoning, salt, and pepper. Bring the mixture to a boil.

        Cook the Noodles: Once boiling, add the broken lasagna noodles to the pot. Cook according to package instructions, typically around 10-12 minutes, stirring occasionally to prevent sticking.

          Combine Cheeses: In a small bowl, mix together the ricotta cheese, half of the mozzarella cheese, and the Parmesan cheese.

            Serve Soup: When the noodles are tender, remove the pot from heat. Ladle the soup into bowls and add a dollop of the cheese mixture on top.
