Ingredients
  

1 pound Italian sausage (sweet or spicy)

1 medium onion, diced

3 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

1 can (15 ounces) tomato sauce

4 cups low-sodium chicken or vegetable broth

2 teaspoons Italian seasoning

1 teaspoon dried basil

1 teaspoon sugar (optional, to balance acidity)

12-15 lasagna noodles, broken into bite-sized pieces

2 cups fresh spinach

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Drain any excess grease.

    Add the diced onion and minced garlic to the pot, stirring until the onion becomes translucent, about 3-4 minutes.

      Stir in the crushed tomatoes, tomato sauce, chicken broth, Italian seasoning, dried basil, and sugar (if using). Bring the mixture to a gentle simmer.

        Add the broken lasagna noodles to the pot, stirring occasionally. Cook for about 8-10 minutes, or until the noodles are tender.

          Once the noodles are cooked, stir in the fresh spinach and cook until wilted, about 2 minutes.

            In a bowl, mix together the ricotta cheese, mozzarella cheese, Parmesan cheese, salt, and pepper. This will be your cheesy topping.

              Serve the soup hot, placing a dollop of the cheese mixture on top of each bowl. Optionally, garnish with fresh basil leaves for an aromatic touch.
