Lasagna has long been a cherished comfort food, known for its layers of rich flavors and satisfying textures. It's the kind of dish that brings family and friends together, offering a warm embrace with every bite. However, traditional lasagna can require hours in the kitchen, from boiling the noodles to layering the ingredients and waiting for it to bake to perfection. For those of us who love lasagna but are pressed for time, lasagna soup presents a delightful solution. This innovative recipe captures all the classic flavors of lasagna in a hearty, comforting soup that can be made in a fraction of the time.

The BEST Lasagna Soup

A delightful twist on a classic dish.

Ingredients
  

1 pound Italian sausage (mild or spicy)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (28 ounces) crushed tomatoes

4 cups chicken or vegetable broth

1 tablespoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

8 ounces uncooked small pasta (like penne or fusilli)

2 cups fresh spinach or chopped kale

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.

    Add the diced onion, garlic, and bell pepper to the pot. Sauté for about 5 minutes, or until the vegetables are softened.

      Stir in the crushed tomatoes, chicken or vegetable broth, Italian seasoning, and crushed red pepper flakes. Bring the mixture to a boil.

        Once boiling, add the uncooked pasta and cook according to package instructions, usually around 8-10 minutes, until al dente.

          Stir in the fresh spinach (or kale) and let it wilt for about 2 minutes.

            In a separate bowl, mix the ricotta cheese with a pinch of salt and pepper.

              Serve the soup hot in bowls. Add a scoop of the ricotta mixture on top of each serving, followed by a sprinkle of mozzarella and Parmesan cheese.

                Garnish with fresh basil leaves if desired. Serve with crusty bread for an extra treat!
