Ingredients

2 lbs russet potatoes

1/2 cup finely grated cheddar cheese

1/4 cup finely chopped green onions

1/4 cup all-purpose flour

1 large egg

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper, to taste

Oil for frying (canola or vegetable oil)

Instructions

Prepare the Potatoes: Scrub the russet potatoes thoroughly to remove any dirt. Place them in a large pot of cold water, and bring to a boil over medium-high heat. Cook the potatoes for about 15-20 minutes, or until they are fork-tender but not fully cooked. Drain and let them cool for a bit.

Shred the Potatoes: Once the potatoes are cool enough to handle, peel them if desired (the skins can be left on for extra texture). Grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and twist to squeeze out excess moisture. This step is crucial for achieving crispy tots!

Mix the Ingredients: In a large mixing bowl, combine the grated potatoes, cheddar cheese, chopped green onions, flour, egg, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

Form the Tater Tots: Using your hands, take small amounts of the potato mixture (about 1 to 2 tablespoons) and shape them into small cylinders or tots. Place them on a parchment-lined baking sheet.

Heat the Oil: In a large, deep skillet, heat about 2 inches of oil over medium-high heat. To check if the oil is ready, drop in a small piece of potato mixture; if it sizzles and bubbles, the oil is ready for frying.

Fry the Tater Tots: Carefully add the formed tater tots to the hot oil in batches, being cautious not to overcrowd the pan. Fry for about 3-4 minutes, or until they are golden brown and crispy on all sides. Use a slotted spoon to remove the tots and place them on a paper towel-lined plate to drain excess oil.

Serve and Enjoy: Season the freshly fried tater tots with a little more salt if desired. Serve them hot with your favorite dipping sauce, such as ketchup, ranch dressing, or aioli.
