2 pounds russet potatoes

1 teaspoon salt (plus extra for seasoning)

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup grated sharp cheddar cheese

1/4 cup finely chopped chives or green onions (optional)

1/4 cup all-purpose flour (more as needed)

1 large egg

Prepare the Potatoes: Begin by peeling and cutting the russet potatoes into quarters. Place them in a large pot, cover with cold water, and add a generous pinch of salt. Bring to a boil and cook until tender, around 15-20 minutes. Drain and let them cool slightly.

    Mash the Potatoes: Once the potatoes are cool enough to handle, transfer them to a large bowl and mash them until smooth. You can also use a food processor for a finer texture. Let the mashed potatoes cool completely for about 30 minutes.

      Mix the Ingredients: Add the grated cheddar cheese, chopped chives (if using), 1 teaspoon salt, pepper, garlic powder, onion powder, flour, and egg to the mashed potatoes. Mix everything together until well combined. The mixture should be firm and slightly sticky. If it’s too wet, gradually add more flour until the desired texture is reached.

        Shape the Tots: Scoop out small portions of the potato mixture (about 1 tablespoon each) and shape them into small cylinders or balls, about the size of a marble. Place the shaped tots on a parchment-lined baking sheet.

          Chill the Tater Tots: Cover the baking sheet with plastic wrap and place it in the freezer for at least 1 hour (up to overnight). Chilling helps them hold their shape during frying.

            Heat the Oil: In a large, deep skillet or deep fryer, heat about 2 inches of vegetable oil to 350°F (175°C).
