The Best Fudgy Chewy Browkies (Brookies)

A delightful twist on a classic dish.

Ingredients

For the Brownie Layer:

1/2 cup unsalted butter (1 stick)

1 cup granulated sugar

1/2 cup packed brown sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

3/4 cup chocolate chips (semi-sweet or dark)

For the Cookie Layer:

1/2 cup unsalted butter (1 stick), softened

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup chocolate chips (semi-sweet or milk)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish, lining it with parchment paper for easy removal.

    Make the Brownie Layer:

      - In a medium saucepan, melt 1/2 cup of butter over low heat. Remove from heat and whisk in granulated sugar and brown sugar until combined.

        - Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.

          - Sift cocoa powder, flour, salt, and baking powder into the mixture. Stir until just combined. Fold in chocolate chips.

            - Pour the brownie batter into the prepared baking dish and spread evenly.

              Make the Cookie Layer:

                - In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

                  - Beat in the egg and vanilla extract until combined.

                    - In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined. Stir in chocolate chips.

                      - Drop spoonfuls of the cookie dough over the brownie layer. Use a spatula or your hands to gently spread and combine the two layers slightly for a marbled effect (don’t mix too much).

Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs (not completely clean).

Cool and Serve: Let the Browkies cool in the pan for about 15 minutes before lifting them out using the parchment paper. Cut into squares and serve warm or at room temperature.
