1/2 cup (115g) unsalted butter

1 cup (200g) granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup (40g) unsweetened cocoa powder

1/2 cup (65g) all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

For the Cookie Layer:

1/2 cup (115g) unsalted butter, softened

1/2 cup (100g) granulated sugar

1/2 cup (100g) packed brown sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups (190g) all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup (180g) semi-sweet chocolate chips

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, allowing some overhang for easy removal later.

      Make the Brownie Layer:

        - In a medium saucepan, melt the butter over low heat. Remove from heat and whisk in sugar, eggs, and vanilla until combined.

          - Stir in cocoa powder, flour, salt, and baking powder until just combined and glossy. Do not overmix.

            - Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 15 minutes, then remove and let cool slightly.

              Prepare the Cookie Layer:

                - In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

                  - Beat in the egg and vanilla extract until well combined.

                    - In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring just until combined.

                      - Fold in the chocolate chips.

                        Assemble the Browkies:

                          - Once the brownie layer has cooled for about 15 minutes, dollop spoonfuls of the cookie dough over the brownie layer. You can swirl them slightly with a knife if desired for a marbled effect, but don’t overmix.

                            Bake:

                              - Return the pan to the oven and bake for another 25-30 minutes or until the cookie layer is golden brown and a toothpick inserted in the middle comes out with a few moist crumbs (not wet batter).

                                - Allow the browkies to cool in the pan for at least 20 minutes before lifting them out using the parchment paper.
