For the Spicy Tuna Filling:

1 cup sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon sriracha (adjust to taste)

1 green onion, finely chopped

1 teaspoon sesame oil

Salt and pepper, to taste

For the Onigirazu Wrap:

2 large sheets of nori (seaweed)

1 cup sushi rice, cooked and seasoned (with rice vinegar, sugar, and salt)

1/2 avocado, sliced

1/2 cucumber, thinly sliced

1 handful of mixed greens or baby spinach

Optional: pickled ginger and wasabi for serving

Instructions
 

Prepare the Spicy Tuna Filling:

    - In a bowl, combine the diced tuna, mayonnaise, sriracha, green onion, and sesame oil. Mix gently until well combined. Season with salt and pepper to taste. Set aside.

      Prepare the Sushi Rice:

        - If you haven’t done so already, cook sushi rice according to package instructions. Once cooked, season it with a mixture of rice vinegar, sugar, and salt while it's still warm. Allow it to cool slightly.

          Assemble the Onigirazu:

            - Place one sheet of nori, shiny side down, on a clean surface or bamboo mat.

              - With wet hands, spread about half the sushi rice evenly in the center of the nori, forming a square about 4x4 inches.

                - Layer half of the spicy tuna mixture on top of the rice, followed by slices of avocado, cucumber, and a small handful of mixed greens.

                  Fold the Nori:

                    - To fold, bring the bottom edge of the nori up over the filling, then fold in the sides and finally fold the top edge down. It should resemble a square package.

                      - Repeat the process for the second wrap.

                        Toast the Onigirazu (Optional):

                          - For extra crispiness, heat a non-stick skillet over medium heat. Place the wrapped onigirazu seam-side down, and toast for about 2-3 minutes on each side until the nori is crispy and slightly browned.

                            Serve:

                              - Cut each onigirazu in half for easy eating. Serve with pickled ginger and wasabi on the side for an added flavor punch!
