Ingredients
  

4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

2 tablespoons butter

1 teaspoon dried thyme

Salt and pepper to taste

Green onions, for garnish

Crumbled bacon, for garnish (optional)

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.

    Add the diced potatoes to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.

      Once the potatoes are soft, use an immersion blender to purée the soup until smooth. (For a chunkier texture, blend only half of the soup and leave the other half as is.)

        Stir in the heavy cream, sour cream, shredded cheddar cheese, thyme, salt, and pepper. Cook on low heat for an additional 5 minutes to allow the cheese to melt completely.

          Adjust seasoning if necessary and remove the soup from heat. Serve hot, garnished with chopped green onions and crumbled bacon if desired.
