Ingredients
  

For the Cookie Dough:

2 ¾ cups all-purpose flour

1 tsp baking soda

½ tsp baking powder

½ tsp salt

1 cup unsalted butter, softened

1 cup packed brown sugar

½ cup granulated sugar

2 large eggs

2 tsp vanilla extract

For the Cinnamon Sugar Filling:

1 cup brown sugar, packed

2 tbsp ground cinnamon

¼ cup unsalted butter, softened

For the Cream Cheese Frosting:

4 oz cream cheese, softened

¼ cup unsalted butter, softened

1 cup powdered sugar

1 tsp vanilla extract

1-2 tbsp milk, as needed for consistency

Instructions
 

Preheat the Oven:

    Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

      Make the Cookie Dough:

        - In a bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

          - In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy.

            - Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

              - Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

                Prepare the Cinnamon Sugar Filling:

                  - In a small bowl, combine the brown sugar and ground cinnamon.

                    - In another bowl, mix the softened butter until creamy, then add the cinnamon sugar mixture and blend until smooth.

                      Assemble the Cookies:

                        - Roll out the cookie dough on a lightly floured surface into a rectangle about ¼ inch thick.

                          - Spread the cinnamon sugar filling evenly over the dough, leaving a small border around the edges.

                            - Carefully roll the dough into a log, starting from the longer side. Wrap it in plastic wrap and chill in the refrigerator for 30 minutes.

                              Slice and Bake:

                                - Remove the chilled log from the fridge and slice it into ½-inch thick rounds.

                                  - Place the cookie slices on the prepared baking sheets, spacing them about 2 inches apart.

                                    - Bake for 10-12 minutes, or until the edges are just golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

                                      Prepare the Cream Cheese Frosting:

                                        - In a mixing bowl, beat together the softened cream cheese and butter until smooth.

                                          - Gradually add the powdered sugar while continuing to mix, then stir in the vanilla extract. If the frosting is too thick, add milk a little at a time until you reach your desired consistency.

                                            Frost the Cookies:

                                              Once the cookies are cool, drizzle or spread the cream cheese frosting on top of each cookie.

                                                Serve and Enjoy:
