2 ¾ cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

½ tsp salt

1 tsp ground cinnamon

1 cup unsalted butter, softened

1 cup granulated sugar

½ cup brown sugar, packed

2 large eggs

2 tsp vanilla extract

½ cup chopped pecans or walnuts (optional)

For the Cinnamon Sugar Filling:

1 tbsp ground cinnamon

½ cup brown sugar, packed

¼ cup unsalted butter, softened

For the Cream Cheese Frosting:

4 oz cream cheese, softened

¼ cup unsalted butter, softened

1 cup powdered sugar

1 tsp vanilla extract

1-2 tbsp milk (as needed)

Instructions
 

Preheat your oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until well blended. Set aside.

      Cream the butter and sugars: In a large mixing bowl, using an electric mixer, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).

        Add eggs and vanilla: Beat in the eggs one at a time, followed by the vanilla extract, ensuring everything is well combined.

          Combine wet and dry mixtures: Gradually add the dry mixture to the wet ingredients, mixing just until combined. Be careful not to over-mix the dough.

            Prepare cinnamon filling: In a small bowl, combine the brown sugar and cinnamon for the filling. In another bowl, mix the softened butter until creamy. This will serve as a spread.

              Assemble cookies: On a floured surface, take about ½ cup of cookie dough and flatten it into a rectangle. Spread a thin layer of the softened butter over the top, then sprinkle generously with the cinnamon-sugar mixture. If desired, sprinkle with chopped nuts. Roll the dough tightly from one end to the other into a log.

                Cut and shape: Slice the rolled dough into ½ inch thick cookies and place them on the prepared baking sheet, leaving space between each cookie.

If the frosting is too thick, add milk a tablespoon at a time until you reach your desired consistency.

                      Frost cookies: Once the cookies have cooled completely, drizzle or spread the cream cheese frosting over the tops of each cookie.
