12 oz penne pasta

1 lb boneless, skinless chicken breasts, diced

2 cups heavy cream

1 cup sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1/2 cup Parmesan cheese, grated

2 tbsp olive oil

3 cloves garlic, minced

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Prepare Chicken: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken, season with salt, pepper, and red pepper flakes if using. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove from the skillet and set aside.

      Make the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and bring to a simmer, stirring constantly.

        Add Cheese: Reduce the heat to low, then gradually add the sharp cheddar, mozzarella, and Parmesan cheese, stirring until melted and smooth. Stir in the Italian seasoning.

          Combine: Add the cooked chicken back to the skillet along with the drained penne pasta. Toss everything together until the pasta is well coated with the cheesy sauce. Adjust seasoning as needed.
