1.5 lbs boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 teaspoons garam masala

1 teaspoon turmeric powder

1 teaspoon chili powder

1 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon salt

4 tablespoons butter

1 medium onion, finely chopped

3 cloves garlic, minced

1 inch ginger, grated

1 can (15 oz) crushed tomatoes

1 cup heavy cream

1 tablespoon sugar

Fresh cilantro, for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine chicken pieces with yogurt, lemon juice, garam masala, turmeric, chili powder, cumin, coriander, and salt. Mix well to coat the chicken. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

    Cook the Chicken: In a large skillet or pan, melt 2 tablespoons of butter over medium heat. Add the marinated chicken (including any remaining marinade) and sear until browned on all sides, about 5-7 minutes. Remove the chicken from the pan and set aside.

      Sauté Aromatics: In the same pan, add the remaining butter. Once melted, add the chopped onion and sauté until translucent and golden brown, about 5-6 minutes. Stir in garlic and ginger, and cook for an additional minute until fragrant.

        Make the Sauce: Add crushed tomatoes to the pan and stir well. Allow to simmer for 10 minutes, allowing flavors to meld. Reduce heat to low and then stir in heavy cream and sugar. Mix until smooth.

          Combine Chicken with Sauce: Return the browned chicken to the pan, coating it in the creamy tomato sauce. Simmer on low heat for an additional 10-15 minutes, or until the chicken is cooked through and tender.

            Serve: Garnish with fresh cilantro and serve hot with basmati rice or naan bread.
