Ingredients
  

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or milk mixed with lemon juice)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

1 teaspoon vanilla extract

1/2 cup grated carrots

1/4 cup crushed pineapple (drained)

1/4 cup chopped walnuts (optional)

Maple syrup for serving

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.

        Fold in the grated carrots, crushed pineapple, and walnuts (if using) until evenly distributed.

          Heat a non-stick skillet or griddle over medium heat and add a little melted butter to grease the surface.

            Pour 1/4 cup of the pancake batter onto the hot skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 3-4 minutes.

              Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown.

                Repeat with the remaining batter, adding more butter to the skillet as needed.

                  Serve warm with maple syrup and enjoy!
