For the pie crust:

2 ½ cups all-purpose flour

1 teaspoon salt

1 tablespoon granulated sugar

1 cup unsalted butter, chilled and diced

6-8 tablespoons ice water

For the apple filling:

6 cups apples (mix of Granny Smith and Honeycrisp), peeled, cored, and sliced

¾ cup granulated sugar

¼ cup brown sugar, packed

3 tablespoons all-purpose flour

2 teaspoons ground cinnamon

½ teaspoon nutmeg

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

Instructions
 

Prepare the pie crust:

    - In a large bowl, combine flour, salt, and sugar.

      - Add the diced butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

        - Stir in the ice water, a tablespoon at a time, until the dough comes together.

          - Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

            Make the apple filling:

              - In a large bowl, toss the apple slices with the granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract.

                - Allow the mixture to sit for about 15-20 minutes, allowing the flavors to meld.

                  Assemble the pie:

                    - Preheat your oven to 425°F (220°C).

                      - Roll out one disc of pie dough on a floured surface to fit a 9-inch pie pan. Transfer the dough to the pie pan and trim any excess.

                        - Pour the apple filling into the crust, making sure to arrange the apples evenly.

                          Top the pie:

                            - Roll out the second disc of dough and place it over the apple filling.
