Thai Peanut Chicken Stir-Fry

1 lb (450g) boneless, skinless chicken thighs, sliced

2 tablespoons vegetable oil

1 bell pepper, sliced (red or yellow for color)

1 cup broccoli florets

1 medium carrot, julienned

3 green onions, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

½ cup unsweetened peanut butter

¼ cup low-sodium soy sauce

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

Fresh cilantro or basil for garnish (optional)

Cooked jasmine rice or noodles for serving

Instructions
 

Prepare the Sauce: In a bowl, combine the peanut butter, soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes. Whisk until smooth and set aside.

    Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken thighs and season with salt and pepper. Stir-fry for about 6-7 minutes, or until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant. Then, add the bell pepper, broccoli, and carrots. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

        Combine Chicken and Sauce: Return the cooked chicken to the skillet with the vegetables. Pour the peanut sauce over the top. Stir everything together until the chicken and vegetables are evenly coated in the sauce. Allow to cook for an additional 2-3 minutes, allowing the flavors to meld.

          Serve: Remove from heat. Garnish with chopped green onions and fresh herbs like cilantro or basil if desired. Serve the stir-fry over cooked jasmine rice or toss with noodles. Enjoy!
