Teriyaki Tofu Bowl

1 block (14 oz) extra firm tofu, pressed and cubed

1 cup cooked jasmine rice

1 cup broccoli florets

1 bell pepper (red or yellow), sliced

1 carrot, julienned

2 green onions, sliced

2 tablespoons sesame oil

1/4 cup soy sauce (low-sodium recommended)

2 tablespoons mirin (sweet rice wine)

1 tablespoon rice vinegar

1 tablespoon brown sugar

1 teaspoon fresh ginger, minced

2 cloves garlic, minced

1 tablespoon cornstarch

2 tablespoons water

Sesame seeds for garnish

Prepare the tofu: Start by pressing the tofu to remove excess moisture. Wrap the block in paper towels and place a heavy skillet on top for about 15-20 minutes. Once pressed, cut the tofu into 1-inch cubes.

    Make the Teriyaki sauce: In a small bowl, whisk together the soy sauce, mirin, rice vinegar, brown sugar, ginger, and garlic. In another small bowl, mix the cornstarch and water until smooth, then stir this into the soy sauce mixture.

      Cook the tofu: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the cubed tofu and sauté for about 8-10 minutes until golden and crispy on all sides. Remove from the skillet and set aside.

        Stir-fry the vegetables: In the same skillet, add the remaining tablespoon of sesame oil. Once hot, toss in the broccoli, bell pepper, and carrot. Stir-fry for 5-7 minutes or until tender but still crisp.

          Combine: Return the tofu to the pan with the stir-fried vegetables. Pour the teriyaki sauce over the mixture and cook for an additional 2-3 minutes, stirring until everything is well-coated and the sauce thickens slightly.

            Serve: In bowls, start with a base of jasmine rice, then top with the teriyaki tofu and vegetables. Finish with sliced green onions and a sprinkle of sesame seeds.
