2 salmon fillets (6 oz each)

1 cup sushi rice

1 ¼ cups water

½ cup teriyaki sauce (store-bought or homemade)

1 cup broccoli florets

1 cup julienned carrots

½ cup edamame (shelled)

1 ripe avocado, sliced

2 green onions, chopped

1 tablespoon sesame seeds

Salt and pepper, to taste

Olive oil for cooking

Nori sheets (optional, for garnish)

Instructions
 

Prep the Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or a pot. Cook according to the rice cooker's instructions or bring to a boil on the stovetop, reduce the heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 10 minutes.

    Prepare the Salmon: While the rice cooks, season the salmon fillets with salt and pepper. Heat a non-stick skillet over medium heat and add a drizzle of olive oil. Once hot, place the salmon skin-side down and cook for about 4-5 minutes. Carefully flip the salmon and cook on the other side for another 3-4 minutes.

      Add Teriyaki Sauce: In the last minute of cooking, pour the teriyaki sauce over the salmon, allowing it to caramelize slightly. Remove the salmon from the skillet and let it rest.

        Steam the Vegetables: In the same skillet (you can add more oil if needed), add the broccoli florets and carrots. Add a splash of water to create steam, cover, and cook for about 3-4 minutes until the veggies are tender but still crisp. Stir in the edamame and cook for an additional 1 minute.

          Assemble the Bowl: Fluff the sushi rice with a fork and divide it between two bowls. Slice the salmon fillets and place them on top of the rice. Arrange the steamed veggies and avocado slices around the salmon.

            Garnish: Drizzle additional teriyaki sauce over the bowl if desired. Sprinkle with chopped green onions and sesame seeds. If using, tear nori sheets into bite-sized pieces and scatter them over the bowl.
