Casseroles have long been cherished as a quintessential comfort food, offering warmth and satisfaction in every bite. Teriyaki Chicken Casserole

A delightful twist on a classic dish.

Ingredients
  

2 cups cooked chicken, shredded

1 cup uncooked jasmine rice

2 cups broccoli florets

1 bell pepper, diced (red or yellow for color)

1 cup carrots, thinly sliced

1/2 cup green onions, chopped

1 cup teriyaki sauce (store-bought or homemade)

2 cups chicken broth

1 cup shredded mozzarella cheese

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

Sesame seeds for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the cooked shredded chicken, uncooked jasmine rice, broccoli florets, diced bell pepper, sliced carrots, and chopped green onions.

      In a separate bowl, mix together the teriyaki sauce, chicken broth, sesame oil, garlic powder, ginger powder, salt, and pepper. Whisk until well combined.

        Pour the teriyaki sauce mixture over the chicken and vegetable mixture. Stir until everything is evenly coated.

          Transfer the mixture to a greased 9x13 inch baking dish, spreading it out evenly.

            Cover the casserole with aluminum foil and bake in the preheated oven for 40 minutes.

              After 40 minutes, remove the foil and sprinkle the shredded mozzarella cheese on top.

                Return the casserole to the oven (uncovered) and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                  Once done, remove from the oven and let it cool for a few minutes. Garnish with sesame seeds and additional green onions if desired.

                    Serve warm and enjoy!
