Ingredients

For the Steak:

2 ribeye steaks (about 1 inch thick)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

4 cloves garlic, smashed

2 sprigs fresh rosemary

2 tablespoons unsalted butter

For the Creamy Pasta:

8 ounces fettuccine or tagliatelle

1 tablespoon olive oil

1 shallot, finely chopped

2 cloves garlic, minced

1 cup heavy cream

½ cup freshly grated Parmesan cheese

1 teaspoon lemon zest

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Instructions

Prepare the Steak:

    - Take the steaks out of the refrigerator and let them come to room temperature for about 30 minutes. This helps in cooking them evenly.

      - Season both sides generously with salt and freshly ground black pepper.

        Cook the Steak:

          - In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, carefully place the steaks in the skillet.

            - Sear each steak for about 4-5 minutes on one side until a nice crust forms, then flip.

              - Add the smashed garlic, rosemary sprigs, and butter to the pan. Spoon the melted butter over the steaks as they cook for an additional 3-4 minutes for medium-rare. (Adjust time to your preferred doneness.)

                - Once done, remove the steaks from the skillet and let them rest on a cutting board, loosely covered with foil.

                  Cook the Pasta:

                    - While the steak is resting, bring a large pot of salted water to a boil. Add the fettuccine or tagliatelle and cook according to package instructions until al dente. Drain and set aside.

                      Prepare the Creamy Sauce:

                        - In the same skillet used for the steak (discard any excess fat), heat 1 tablespoon of olive oil over medium heat. Add the chopped shallot and sauté for 2-3 minutes until softened.

                          - Add the minced garlic and cook for an additional minute until fragrant.

                            - Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese until it melts and the sauce thickens slightly.

                              - Add the lemon zest and season with salt and pepper to taste.

                                Combine the Pasta with Sauce:

                                  - Toss the cooked pasta in the creamy sauce, ensuring it’s evenly coated. If the sauce is too thick, add a splash of pasta water to reach your desired consistency.

                                    Serve:

                                      - Slice the rested steaks against the grain into strips. Plate the creamy pasta and top with the tender steak slices.

                                        - Garnish with fresh parsley and an extra sprinkle of Parmesan if desired. Serve immediately.
