1 whole chicken (4-5 lbs)

2 tablespoons olive oil

1 tablespoon unsalted butter, softened

2 teaspoons kosher salt

1 teaspoon freshly ground black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon paprika

1 lemon, quartered

1 onion, quartered

4 cloves garlic, smashed

Fresh herbs (such as rosemary or thyme) for stuffing (optional)

Instructions
 

Prepare the Chicken: Preheat your oven to 425°F (220°C). Remove the chicken from its packaging, pat it dry with paper towels, and let it sit at room temperature for about 30 minutes.

    Season the Chicken: In a small bowl, mix the olive oil, softened butter, kosher salt, black pepper, garlic powder, onion powder, dried thyme, and paprika to create a seasoning paste.

      Apply the Mixture: Gently loosen the skin of the chicken over the breast and thighs. Use your fingers to rub half of the seasoning paste directly onto the meat under the skin. Spread the remaining mixture all over the outer skin of the chicken.

        Stuff the Chicken: Stuff the cavity of the chicken with the lemon quarters, onion quarters, smashed garlic cloves, and fresh herbs if using.

          Truss the Chicken: Tie the legs together with kitchen twine and tuck the wing tips under the body to ensure even cooking.

            Roast the Chicken: Place the chicken breast-side up on a roasting rack in a baking dish. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is beautifully golden.

              Rest the Chicken: Once done, remove the chicken from the oven and let it rest for 15-20 minutes. This allows the juices to redistribute for maximum tenderness.
