Ingredients

1 pound frozen tater tots

1 pound ground breakfast sausage

1/4 cup all-purpose flour

2 cups milk (whole or 2%)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese

4 large eggs

Fresh chives or parsley (for garnish)

Instructions

Cook the Tater Tots: Preheat your oven to 425°F (220°C) and spread the frozen tater tots on a baking sheet in a single layer. Bake according to package instructions until golden brown and crispy, usually around 20-25 minutes. Flip them halfway through for even cooking.

Prepare the Sausage Gravy: While the tater tots are baking, heat a large skillet over medium heat. Add the ground breakfast sausage, breaking it up with a spatula. Cook until browned and fully cooked through, approximately 5-7 minutes.

Make the Roux: Once the sausage is browned, sprinkle the flour over it and stir well to coat the sausage. Cook for about 1-2 minutes to remove the raw flour taste.

Add the Milk: Gradually pour in the milk while whisking continuously. Bring the mixture to a simmer, allowing it to thicken. Season with garlic powder, onion powder, salt, and pepper to taste. Cook for about 5 minutes until the gravy is thickened to your desired consistency.

Cook the Eggs: In a separate pan, fry or scramble the eggs based on your preference. If frying, cook them sunny-side up or over-easy until the whites are set.

Assemble the Breakfast Bowl: In serving bowls, layer the crispy tater tots, followed by a generous portion of sausage gravy. Top with the eggs, and sprinkle shredded cheddar cheese over the top.

Garnish & Serve: Finish with a sprinkle of fresh chives or parsley for added color and flavor. Serve immediately while warm.
