Tater Tot Breakfast Bowl with Sausage Gravy

Ingredients
  

1 (32 oz) bag frozen tater tots

1 pound breakfast sausage (preferably country sausage)

1/4 cup all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for heat)

4 large eggs

1 cup shredded cheddar cheese

Salt, to taste

Chopped green onions, for garnish

Prepare the Tater Tots:

    - Preheat your oven to 425°F (220°C). Spread the frozen tater tots on a baking sheet in a single layer. Bake for about 25–30 minutes until golden and crispy, flipping halfway through cooking for even browning.

      Make the Sausage Gravy:

        - In a large skillet over medium heat, crumble and cook the sausage until browned and fully cooked through, about 5–7 minutes. Drain any excess grease.

          - Reduce heat to low, then sprinkle the flour over the sausage. Stir well to combine, cooking for an additional 1-2 minutes.

            - Slowly whisk in the milk, stirring continuously until the mixture thickens, about 5 minutes. Add garlic powder, onion powder, black pepper, cayenne pepper (if using), and salt to taste. Keep it warm on low heat.

              Cook the Eggs:

                - In a separate skillet, cook the eggs to your liking. You can fry, scramble, or poach them—just make sure they are cooked just before assembling the bowls to keep them warm.

                  Assemble the Breakfast Bowl:

                    - Once the tater tots are done, remove them from the oven. In serving bowls, create a base with tater tots.

                      - Top each bowl with a generous amount of sausage gravy, followed by a cooked egg and a sprinkle of shredded cheddar cheese.

                        - Finish with chopped green onions for garnish.
