1 cup granulated sugar

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 2 lemons

1 teaspoon vanilla extract

1 (15 oz) box lemon-flavored cake mix

1/2 cup unsalted butter, melted

2 cups sour cream

1/2 cup powdered sugar

Fresh lemon slices and mint leaves for garnish (optional)

Instructions
 

Prep the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter or non-stick spray.

    Cream Cheese Mixture: In a mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the lemon juice, lemon zest, and vanilla extract. Mix well until fully incorporated.

      Layering the Cake: Spread the cream cheese mixture evenly across the bottom of the prepared baking dish.

        Add the Cake Mix: Evenly sprinkle the lemon-flavored cake mix over the cream cheese layer, making sure to cover it completely.

          Pour the Butter: Drizzle the melted butter over the cake mix evenly. Do not mix; the butter will soak into the cake during baking.
