Ingredients
  

1 lb ground beef (or turkey)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 can (15 oz) tomato sauce

1 packet taco seasoning

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable or beef broth

1 cup bell pepper, diced (any color)

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, avocado, chopped cilantro, tortilla chips

Instructions
 

In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the diced onion and bell pepper and sauté for about 5 minutes until softened.

    Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the ground beef (or turkey) to the pot, breaking it up with a wooden spoon as it cooks. Season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.

        Stir in the taco seasoning and tomato sauce, making sure to coat the meat and vegetables evenly.

          Add the drained black beans, kidney beans, corn, diced tomatoes with green chilies, and vegetable broth. Stir to combine.

            Bring the mixture to a simmer, then reduce the heat, cover, and let it cook for about 20-30 minutes, allowing all the flavors to meld together.

              Taste and adjust seasonings, adding more salt, pepper, or taco seasoning as desired.

                Serve hot, garnished with your choice of toppings like shredded cheese, sour cream, avocado, chopped cilantro, and tortilla chips for added crunch.
