Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) sweet corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

2 cups beef or chicken broth

2 tbsp taco seasoning (homemade or store-bought)

1 tsp cumin

1/2 tsp chili powder (adjust to taste)

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced avocados, tortilla chips

Instructions
 

In a large pot over medium heat, brown the ground beef or turkey until fully cooked, about 6-8 minutes. Drain any excess fat.

    Add the chopped onion to the pot and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for another 1-2 minutes.

      Pour in the diced tomatoes (with juice), black beans, kidney beans, corn, and broth. Stir well to combine.

        Add the taco seasoning, cumin, chili powder, salt, and pepper. Mix thoroughly.

          Bring the soup to a boil, then reduce heat and let it simmer for about 20-25 minutes to allow flavors to meld. Stir occasionally.

            Taste and adjust seasoning as needed. If you prefer more spice, add more chili powder or diced jalapeños.

              Serve the soup hot, garnished with your choice of toppings such as shredded cheese, sour cream, chopped cilantro, sliced avocado, and crushed tortilla chips. Enjoy!
